Food Safety Focus | Mock Recall – Getting Started

I hope this message finds all of you and your families safe and well.

This week I want to talk a little more about recall readiness by initiating “mock” recall tests. A great way to make sure you are recall ready is to practice with mock recall tests. These tests are recall simulations that you can set up to mimic an actual recall event, to see how ready you really are. There’s more to recalls than just tracing product, so these exercises help us stay sharp and cover everything that could come up during a real event. Our food certifications require us to do at least one mock recall test a year but some customers like to see them completed once every 6 months.

Choose a customer item and a lot number to do the test for, then make up a scenario to include in your test. Something like product has metal pieces or product is contaminated with Listeria, etc. to elevate the need to find all of the product involved. Try to find a lot number that has shipped some product and still has a little on hands left in-house so you can see how well you trace where product has shipped to and to test your hold procedures for product you still have in-house. Now that you have chosen a product, lot number and a reason, you are ready to initiate the mock recall and start the test.

To begin the test, fill out the Recall Intake Form for the mock recall you are doing with as much information as you can about the product and nature of the request, just as you would in an actual event. Remember to mark the time! Recalls are timed so your mock recall test should be timed as well. The industry standard is completion within 4-hours of taking in the recall request; however, I usually ask to have everything back within 2-hours to make sure we stay well within the 4-hour limit. As soon as possible is always best though.
