Food Safety Focus

Hello All! 

I hope this message finds all of you and your families safe and well.

This food safety focus will focus on taking product temperatures when receiving.  

It has been said that the only thing that we actually produce at Burris is cold air, so taking and recording temperatures is a very important part of what we do!

Receiving is where it all starts and it is very important to make sure all products handled are done so at the proper temperatures.  Temperatures should be taken at least three times for a full load of products, when receiving.  Temps should be taken at the tail, middle and the nose of each truck by placing a calibrated probe between the product packaging and recording the temps on the trailer inspection sheet and in the receiving paperwork.  It is very important that we take manual temps of the products during receiving and not just trust the temperature read-out on the trailer.  The temperature read out on the trailer is a good tool to see a temperature before opening the trailer up; however, it is not accurate enough to be the only thing we use to ensure the proper temperature of the product.  Our calibrated thermometers will give us the accurate data we need to ensure all products received are safe for our families.
