This week, with outdoor temperatures getting hotter and hotter, I wanted to take a moment to celebrate National Cucumber Day with you today! Wait, what does National Cucumber Day have to do with the temperature rising? I’m glad you asked…

When many people think of the fruit with the most water, the one that usually come to mind is the watermelon. And with around 92% of the watermelon being made of water, its easy to see why. Besides the quick shot of energy it can give you, watermelon is full of vitamin C and A to make you feel and look a lot better.

What many people may not know is that cucumbers have an even higher water content than even the mighty watermelon! With a water content of 96%, the cucumber has the highest water content of any fruit to help you quench your thirst on a hot day.

Cucumbers are also packed full of vitamins like vitamin C, B and K and metals we need like potassium, phosphorous, copper and magnesium. Just one cup of cucumber slices has almost 20% of the vitamin K you need for the day.

The cucumber originated in India thousands of years ago and has been enjoyed by many civilizations ever since. Christopher Columbus is credited for introducing the fruit to Haiti in 1494 and from Haiti it spread all over the new world.
