Food Safety Focus | The Right Temperature

Hello All Team Members!

This focus will be on the one thing we do best in a cold storage facility. Keeping products cold!

Or more accurately, keeping them at the correct temperature. In fact, without keeping products at the right temperature, all products would be lost and we could cause serious illness or death to occur to those who eat or drink them.

This sounds drastic but remember we handle food and drink and that is a great responsibility to ourselves, our families and the world we live in.

This responsibility starts at receiving, from the trucks and trailers that bring products to us. Everything we store comes from somewhere else, so the first step is to make sure all temperatures are correct during transport to us. Set points and holding temperatures must be verified as correct before even opening the trailer and then the products must be checked from the tail, middle and nose of the trailer with certified thermometers to make sure products are as they should be during unloading.

We cannot skip temperature taking just because it’s a hassle or we think we don’t have time. What we don’t have time for is the consequences of not doing things the right way.

After receiving, we must keep products at the right temperature during storage. We verify temperatures every day through walkthroughs and constant computer monitoring.

Shipping trucks and trailers must be pre-cooled to the correct temperature before loading. Again, we cannot skip or rush this process or we risk harming the products and in turn, people.
